MADAGASCAR BEAN

These are all Madagascar beans.

  • The 9 beans on the right, are how they are available - dried.
  • The 6 beans at the top have been sprouted
  • The 5 beans at the left, have been frozen - when taken from the seed pod

The frozen beans - the 2 green colored beans were from a seed pod that was not mature, when frost killed the vine, at the beginning of winter. If the beans are harvested when the seed pod just starts to turn from green to brown, the seeds can be frozen - and used like frozen peas. I add some to any vegies I am cooking - they are cooked in half an hour - just like potatoes.....

If the dried seeds are used, they need to be soaked overnight , then boiled for about three hours, or until soft.

I actually sprout the seeds - to reduce the phytic acid content. To sprout - soak overnight, drain, then rinse with water twice a day. The seeds above, have been sprouted for three days.

For me, madagascar beans are one of the nicest beans - best flavor.......

Botanical Name: Phaseolus lunatus syn. P. limensis
Common Names: Madagascar Bean syn. Tropical Lima Bean.
Plant Family: Fabaceae

Plant Description
A vigorous climbing tropical lima bean, which will last for many years in the ground. It is excellent at coping with wet, humid conditions. There is usually little pod production in the first year but it is prolific after that. It is tolerant of a wide variety of soil types. Madagascar bean needs a sturdy trellis as it grows vigorously. This is an excellent hardy bean for warmer climates as it dies backs and re-shoots every year. The beans (not the pods) can be eaten fresh, while still white before any colour shows. They also dry well on the vine to a beautiful speckled red and white bean that can be stored for winter soups and casseroles.

Planting Details
Recommended Planting Time: Sow in spring
Planting Depth: Sow the seed 2 - 4 cm deep.
Spacing: Sow directly into the ground, at least 60 cm apart.
Position: This vigorous vine needs a strong trellis.

Harvest
The seeds are an attractive white with burgundy speckles. The shelled beans can be used fresh or dried in soups and stews. The dried beans can also be used to make tempeh. The sprouted seeds are used as a vegetable in Chinese cooking. The young pods are sometimes steamed and eaten but they are quite fibrous. The young leaves can also be steamed and eaten but have a bitter flavour.

(The way it happened, wasn't even someone hacking! Some computer "tech" was eliminating some old files from my computer - to help it run faster. Bingo!! Photos gone!!!)

Concerning hacking.....
Did you know that there are now more than 220,000 new attempts to interfere with computers, created every day. Most are destroyed pretty quickly. BUT>>>>>>>>>    NOT all of them
Made me rethink my computer protection.
It is now, not a question of "ïf" they will take out my computer, it is a question of "when".........

Ginger or ginger root is the rhizome of the plant Zingiber officinale, consumed as a delicacymedicine, or spice. It lends its name to its genus and family (Zingiberaceae). Other notable members of this plant family are turmericcardamom, and galangal.

 It is a perennial reed-like plant with annual leafy stems, about a meter (3 to 4 feet) tall. Traditionally, the rhizome is gathered when the stalk withers; it is immediately scalded, or washed and scraped, to kill it and prevent sprouting. Uses

Ginger produces a hot, fragrant kitchen spice. Young ginger rhizomes are juicy and fleshy with a very mild taste

Mature ginger rhizomes are fibrous and nearly dry. The juice from old ginger roots is extremely potent and is often used as a spice in Indian recipes, and is a quintessential ingredient of ChineseKoreanJapanese and many South Asian cuisines for flavoring dishes such as seafood or goat meat and vegetarian cuisine.

Brewed 
Ginger beer is a carbonated drink, that is flavored primarily with ginger and
 sweetened with sugar or artificial sweeteners.
The original recipe requires only ginger, sugar, water, lemon juice and a fungal-bacteria symbiote 
  known as a ginger beer plant. Fermentation over a few days turns the mixture into ginger beer.
Forms of live culture other than the ginger beer plant can produce a fermented ginger beer. Cultures used
 include brewers or baker's yeastlactic acid bacteria,kefir grains, and tibicos. Brewing ginger beer generates
 carbon dioxide as in beer. The alcohol content, when produced by the traditional process can be high, up to
 11%  although ginger beer is usually brewed with much less alcohol. (In some countries, provided the
 alcohol content is less than a quarter of one percent - the drink can be sold as a "soft drink".
Brewed ginger beer often includes other flavorings, prominently lemon or lime juice. These juices are
 not merely ornamental, however, as they establish an acidic pH balance for the solution; this helps in both
 protecting the ginger beer from other cultures, as well as facilitating sugar inversion to increase the
 availability of the more readily metabolised fructose and glucose. Other, more strictly flavoring-specific, 
elements have often included: citrus zests; cayenne pepper and other hot spices; and admixtures from
 other brews such as nettle or dandelion beers.




West African ginger drink recipe

This is a healthy, refreshing, zesty drink. It’s taken either hot or cold, and is an
 excellent flu remedy.

Ingredients

3 large ginger roots
6 limes
2-3 cups of water
1 heaped tbsp peppercorns
1 heaped tbsp raw sugar


Preparation


Leaving the skin on, chop the ginger into small pieces.
Chop lime with rind into small chunks.

In a blender, put more ginger than lime and add enough water to be able to blend it.


Taste the mixture as you go and add more lime or ginger as needed.
Strain the mixture through a sieve into a bowl and squeeze remaining juice from the pulp.
In the blender add peppercorns and sugar – then return the strained liquid to the blender
and blend until smooth.

Once more strain the mixture through a sieve into a saucepan.
Heat the saucepan and bring the liquid to the boil. As soon as the liquid has reached
boiling point take it off the heat and allow to cool.
Pour liquid over ice and add a little cold water and drink!
